That passion led to a role at Subko Specialty Coffee Roasters, where he trained baristas despite lacking barista experience. “Understanding coffee intellectually isn’t enough,” he says. “You need practical skills to teach them.” This revelation pushed him behind the bar, where repetition and sensory discipline became his foundation. Today, he balances roles as UK Ambassador for South India Coffee Company and barista at Formative Coffee, where his standards are as high as his ambition.

His work is rooted in context. “Indian coffees are complex, structured, and often underestimated,” he insists. He fights to elevate hospitality standards, ensuring coffee’s story isn’t lost in the brew. For Crasto, flavor is shaped long before brewing—origin, processing, and species diversity are the unsung heroes. Competitions, he says, are tools for clarity, not ego. “Flavor is decided before the coffee reaches your grinder,” he reminds. “Origin, processing, and sorting matter more than people realize.” His goal? Raise standards, represent origin with credibility, and keep learning.

Crasto’s achievements speak volumes: 6th at the UK Barista Championship 2025, 3rd at the Indian Barista Championship 2026, and regular spots in Cup Tasters and AeroPress events. But his focus is on growth. Next up: the London Coffee Masters 2026, where interdisciplinary skills and pressure resilience will be tested. “A clean idea executed well beats a complicated one done badly,” he advises.
