Baeza’s vision isn’t just about coffee—it’s about legacy. His family’s history with coffee in Puebla, Mexico, informs every detail. His grandfather, a farmer who shifted from tobacco to citrus after climate shifts and the 1989 coffee crisis, shaped Baeza’s belief in ethical sourcing. “We want to work with roasters who have real relationships with farmers,” he explains. Veil’s menu reflects that ethos, with plans to deepen its focus on Mexican beans sourced directly from farms. “Next year, we’re going to visit the farms,” Baeza says. “We want to meet the people behind the beans.”
